Strangely, my big issue with her is what everyone else gives praise for. There's something in her vocal tone that I don't like. TBH I've only heard her singles, and I'm not sure if it's the vocal treatment or just how she sings, but I have a hard time buying into her "soulfulness". It just sounds too perfect, too bland. I like to use Joss Stone as an example because I think they got to the peak of their popularity in similar ways (industry backing, praise for vocal hability, etc). You listen to Joss's recordings and you can hear she's ripping it, you do get the emotion she's putting through. Adele has a great voice, but I do feel like the soul and emotion everyone talks about is just her singing louder and relying on her great voice sound to make it nice.

I think her popularity is a case of being at the right place at the right time with the right backing. When everything the radio plays is overproduced loud as fuck synthetic crap with vocals that don't even sound like vocals because they've been autotuned and processed to hell and back, wedging any skillfully made record that sounds dynamic and organic in there will grab attention. It's just the public's ears looking for relaxation after the noise onslaught.
